Smoothie Bowls
My latest obsession is smoothie bowls. Smoothies are the shit – they’re easy to make, great for carrying around the house as you’re running late, trying to put on your make-up with one hand and eat brekkie with the other (I can’t imagine having to sit down and eat eggs on toast, what are the chances) and you get a nutrition-packed punch first thing in the morning.
They’re also not so great because cleaning a blender is a bitch and like any other regular food routine they can get boring. I tend to make the same one every single morning because it’s got all the right stuff. So they don’t wow me anymore, you know? I’m just like, oh, another day another smoothie, yay.
So on weekends I’ve started making smoothie bowls instead of smoothies in a glass – and they taste totally different, like sandwiches cut in triangles instead of squares, or other people’s hot chips (how is it that they get the balance of vinegar and tomato sauce JUST right while your own is always soggy?).
Ok I mock, they are made slightly differently. I don’t use any veggies at all, just frozen fruit, so it feels like a naughty cheat smoothie. Yes I know – you don’t have to tell me how rock n roll I am.
With a consistency more like ice cream – complete with brain freeze – these guys are the best after a morning run on a hot summer’s day.
Strawberry Smoothie Bowl aka Nice-cream (non-dairy ice-cream, in case you’re not up to date with your Instahealth jargon)
- 1 ½ cups frozen strawberries
- 2 frozen bananas
- 7 soaked dates
- 2 tbsp protein powder
- 2 tbsp chia seeds
- 1 cup oat milk added gradually
- Top with coconut flakes and pecan nuts
Pineapple Smoothie Bowl
- 1 small frozen pineapple
- 1 frozen banana
- 2 tbsp protein powder
- ¼ cup oat milk
- Top with coconut flakes or chopped fruit
Chuck everything in blender and add liquid til you get ice cream consistency.
