Chocolate Fudge Bites
I officially have a baby bump. It’s not very big and if you didn’t know, you could be forgiven for thinking I’d gone into a chocolate shop and come out packing. But it’s there, and my jeans are getting tight. It’s a weird sensation to eat lunch and feel three times as full as you should because your pants are like, dude hey, what’s with the crowding?
Since I’m 18 weeks this week I should feel her move soon. There’s a whole new level of post for you, since both Mark and I have unwelcome memories of Sigourney Weaver in Alien. Who doesn’t like semi-formed humans doing somersaults in their stomach? Not creepy, not creepy, not creepy… (I think I’m convincing myself).
Anyway while we wait for that totally not creepy occasion that definitely doesn’t remind me of the girl crawling out the well in The Grudge, I’ve been busy baking. Sweet things of course, because hello, still pregnant over here.
I’ve named these guys Yummy Jans – in honour of my brother-in-law who quality tested the batter and fully endorses the flavour. Since you’re all like, we don’t care, I also call them Chocolate Fudge Bites. They only use 4 ingredients and they taste like dark chocolate souffles in cookie form. Winning.
Chocolate Fudge Bites
Ingredients:
- 1 egg
- 1/2 cup cacao powder
- 3.5 tbsp coconut sugar (you can also raw honey – start with 2 tbsp and sweeten to taste as its sweeter than coconut sugar)
- 2 tbsp almond milk
Instructions:
- Mix ingredients together well
- Spoon onto baking tray
- Bake at 180 for 7 mins
- Scoff.
