Raw Chocolate Slices

Every now and then, I make something that makes me feel like a rock star. Not because I rate it as off-the-charts amazing – I’ve learnt to contain my reactions to my own baking until I’ve tested it on a human guinea pig, so as to avoid potential humiliation when they shrug their shoulders in a mediocre ‘eh’.

Instead, the rock star feeling comes when I make something that other people truly, delightedly enjoy and they tell me this effusively. I understand why people enter competitions like Masterchef and the Great British Bake-Off. To have someone tell you your dish is the best of the day – or the best you’ve made in months – makes you ridiculously proud. Ok, so they probably also enter for the money and worldwide fame, but the grassroots kicks are still there.

This weekend I made just such a dish. I chucked a bunch of the usual suspects into a blender and out came a little piece of heaven. Sometimes life hands you a miracle like that. Here’s my super easy recipe for raw chocolate slices aka the new black in my household.#

Raw Chocolate Slices

Ingredients:
  • 2 cups mixed nuts (my mix has almond, brazil, macadamia and cashew)
  • ¼ cup tahini
  • ¼ cup raw honey
  • ½ cup cacao
  • ¼ cup desiccated coconut
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
Instructions:
  1. Line a small loaf tin with baking paper.
  2. Place the nuts in a food processor or blender and pulse to a powder. Add remaining ingredients and pulse until mixture is as smooth as you want it.
  3. Spoon mixture into loaf pan and pack down until smooth.
  4. Freeze for 4 hours or until firm.
  5. Run a knife around the edges of the pan and turn out onto a serving plate. Peel off baking paper and slice.
  6. Enjoy on their own with a cup of coffee or serve with fresh berries berries and  coconut cream as a dessert.
