Chocolate Brownie Overnight Oats
Oats are a big thing in my house. Mark eats them every morning – usually soaked overnight in yoghurt with nuts and berries added – and Lexi eats them cooked with peanut butter, cinnamon and a portion of fruit. I’m not really a sweet breakfast person…I can wake up and eat a spoon of Bovril. On its own. If popcorn for breakfast was an acceptable choice, I’d be popping kernels with my coffee.
Since it’s not and I try not to eat too much Bovril (mainly because it’s like actual crack to me), I usually opt for a boiled egg on a slice of wholewheat toast. Occasionally though, I discover a sweet breakfast recipe that even I’m keen on first thing.
These chocolate brownie overnight oats are so quick to make – you can throw the ingredients into the jar while you’re cooking dinner. Give it a good shake, slap it in the fridge and enjoy a slice of chocolate heaven for breakfast. The best part is that its easily transportable in its little jar, so you can take it to work if you’re in a rush.
